The falafel recipe, like most of what's on the menu, comes from Hana's family kitchen in Baghdad. Nothing here is built off a corporate formula. It's built off recipes that were learned by watching and doing, long before they ever ended up on a menu.


One detail that surprises a lot of first-time guests: the store makes its own Iraqi cheese from raw milk, fresh, in house, every day. It's a small thing, but it's the kind of small thing that tells the story of how Food Land actually operates.
