From Iraq to Idaho: The Story Behind Our Mediterranean Food

Every family recipe has a story, and ours starts far from Boise, in the kitchens of Baghdad.
When Hana Mutlak moved from Iraq to Idaho, she brought with her a deep love for home-cooked meals and the belief that food can connect people across cultures. That belief is what shaped Food Land Market, now one of Boise’s most-loved spots for Mediterranean food in Idaho.
The Beginning: A Taste of Home
In Baghdad, meals are more than food: they’re a gathering. Hana grew up surrounded by the smells of warm bread, simmering stews, and the laughter of family sharing dishes around one table.
When she came to Idaho, she missed that sense of togetherness. The food, the flavors, and the community connection, it all felt too far away. So she decided to bring a piece of it here.
In 2019, Hana opened Food Land Market on the Boise Bench, determined to create a place where anyone could experience the comfort and richness of Mediterranean food in Idaho.
As she shared with Fare Idaho in their feature on Food Land Market:
“I have seen a lot of support from the American community to my business, until now I am getting support from everyone in Idaho. Opening a Middle Eastern market and [restaurant] will help Americans to know a little bit about Middle Eastern [culture]. I would like to share my culture with everyone.”
That intention became the foundation of everything Food Land stands for.
Building a Market and a Community
What started as a small grocery store quickly became something much more: a café, a bistro, and a gathering space.
Hana and her family didn’t just bring recipes from Iraq; they brought hospitality. Step inside Food Land and you’ll hear Arabic, English, and Spanish. You’ll see families shopping together, students stopping in for shawarma, and regulars talking together over Turkish coffee.
It’s that mix of energy and warmth that makes the Boise Bench feel a little bit like home for everyone who visits.

The Heart of Our Mediterranean Food
Every dish at Food Land carries a bit of family history.
Falafel is made using a recipe passed down through generations, crispy on the outside, fluffy inside, and full of herbs.
Hummus is blended daily from scratch, using tahini imported straight from the Middle East.
Shawarma is marinated overnight, then grilled to order for that perfect balance of flavor.
Baklava is handmade, one layer at a time, just like Hana’s mother used to make.
It’s not about perfection, it’s about preserving authenticity. That’s why locals call it the best Mediterranean food in Idaho: it tastes like something made with care.
Teaching Through Taste
Food Land Market isn’t just a business; it’s a classroom.
Many customers come in curious, wanting to learn what “za’atar” or “sumac” means. Others just want to know how to say “thank you” in Arabic. Hana and her team always take the time to answer questions and share the stories behind each dish.
That openness is what has made Food Land such a special part of the Boise community. It’s where curiosity meets culture over coffee, bread, and good conversation.

A Family Tradition That Keeps Growing
Food Land continues to grow, but its foundation remains the same: family, hospitality, and flavor. Every staff member becomes part of that story. Every customer becomes a friend.
As Hana says in Fare Idaho’s profile, sharing food is about more than what’s on the plate:
“People have told us that we got the best food in the community and we will always work harder with people’s support to make the best food with the highest quality.”
